  • 1 lb North Coast Seafoods Premium Cold-Water Lobster Meat
  • 4 Tbsp butter
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 2 Tbsp tomato paste
  • ¼ cup all-purpose flour
  • ½ cup dry white wine
  • 4 cups seafood stock (or fish stock)
  • 1 cup heavy cream
  • 1 bay leaf
  • 1 tsp paprika
  • Pinch of cayenne pepper (optional)
  • Salt and pepper, to taste
  • Fresh chives or parsley, for garnish

Instructions

  1. Sauté the Aromatics - Melt the butter in a large pot over medium heat. Add onion, celery, and carrots. Cook 5–6 minutes, stirring occasionally, until veggies soften. Add garlic, then cook another minute.
  2. Build the Base - Stir in tomato paste and cook 1–2 minutes to deepen its flavor. Sprinkle the flour over the vegetables and stir well to form a roux. Let it cook for 1 minute.
  3. Deglaze with Wine - Pour in the white wine, scraping the bottom of the pot to release any browned bits. Let simmer for 2–3 minutes.
  4. Add Stock & Seasonings - Add seafood stock, bay leaf, paprika, cayenne (if using), and a generous pinch of salt and pepper. Bring to a gentle boil, then reduce the heat and simmer for 20 minutes.
  5. Blend Until Smooth - Remove the bay leaf. Use an immersion blender to puree the bisque until smooth. (Or carefully transfer to a blender in batches.)
  6. Stir in the Lobster & Cream - Add the Premium Cold-Water Lobster Meat to the pot, reserving a small portion for garnish. Stir in the heavy cream. Simmer on low for 5–7 minutes to warm the lobster and meld flavors. Avoid boiling.
  7. Serve & Garnish - Ladle into bowls and top with reserved lobster meat and fresh herbs. Serve warm with crusty bread.
