  • 1 Lb Center Cut Bacon
  • 1 Tbsp Kosher Salt
  • 1 Tbsp Black Pepper
  • 4 Tbsp Butter, melted
  • 1 Garlic Clove, grated
  • 1 Tbsp Chopped Parsley

  1. Preheat the oven to 300°F. Arrange bacon strips in a single layer on a sheet pan, ensuring they do not overlap.
  2. Bake bacon for approximately 10 minutes, until just cooked but still pliable. Do not crisp. Remove from oven and set aside.
  3. While the bacon cooks, prepare the scallops. Remove the adductor muscle from each scallop, as it is tough in texture. Season scallops evenly with salt and pepper.
  4. Wrap each scallop with a strip of partially cooked bacon and secure with one or two wooden toothpicks.
