    • 1 pint North Coast Seafoods Wellfleet Oysters, chopped (reserve the liquor
    • 8 cups cubed day-old bread (sourdough or white bread works best)
    • 6 Tbsp butter
    • 1 medium onion, diced
    • 2 celery stalks, diced
    • 2 cloves garlic, minced
    • ¼ cup parsley, chopped
    • 1 Tbsp fresh thyme leaves (or 1 tsp dried thyme)
    • 1 tsp poultry seasoning
    • ½ cup chicken broth (plus more as needed)
    • Salt and pepper, to taste

    Instructions

    1. Prep the Bread - Preheat the oven to 350°F. Spread the cubed bread on a baking sheet and toast for 10 to 12 minutes, or until lightly golden. Set aside to cool.
    2. Sauté the Vegetables - In a large skillet, melt the butter over medium heat. Add onion and celery, cooking for 6 to 7 minutes until softened. Stir in garlic and cook for 1 additional minute.
    3. Add Herbs & Seasonings - Add parsley, thyme, and poultry seasoning to the skillet. Season with salt and pepper. Stir well to combine and heat the herbs through.
    4. Add Oysters & Liquor - Stir in the chopped Wellfleet Oysters and their reserved liquor. Cook for 2 to 3 minutes, or just until the oysters begin to firm up slightly.
    5. Combine with Bread - Transfer the toasted bread cubes to a large mixing bowl. Pour the oyster mixture over the bread and gently combine. Add chicken broth a little at a time until the stuffing is moist but not soggy.
    6. Bake Until Golden - Spread the mixture into a greased baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 to 15 minutes, or until the top is slightly crisp and golden.
    7. Serve Warm - Remove from the oven and serve immediately as a comforting holiday side dish.
