Frequently Asked Questions About Crab Rolls

What type of crab is best for crab rolls?

The best type of crab for crab rolls is Colossal lump crab meat. We recommend Culinary Reserve crab meat from North Coast Seafoods. It has a naturally sweet, buttery flavor and delicate, flaky texture. It naturally becomes the star of any dish, and our crab roll recipe is no exception!

What’s the difference between crab rolls and lobster rolls?

The primary difference between crab rolls and lobster rolls lies in the protein used to make each sandwich. A crab roll features crab meat, while a lobster roll is made with lobster meat.

Generally, lobster rolls tend to be more expensive since lobster meat is typically pricier than crab meat. However, both are considered luxury proteins and share a similarly rich flavor. Some people describe crab as sweeter than lobster, while lobster may have a more naturally buttery taste. Lobster also tends to be firmer than crab, which tends to be flakier and less dense.

How do you make a creamy crab roll filling?

To make a creamy crab roll filling, you can use the Old Bay aioli as a dressing instead of a topping. First, make sure your cooked crab meat is completely chilled. Then, gently fold your crab meat into the aioli before adding the mixture to your grilled brioche rolls. We recommend serving these crab rolls cold for a refreshing alternative to a hot crab roll.

Should crab rolls be served hot or cold?

The choice to enjoy your crab roll hot or cold comes down to personal preference. When served hot, we refer to crab rolls as “Connecticut style.” When served cold, we refer to them as “Maine style.” However, the crab roll recipe you follow will dictate how your crab roll is best enjoyed.

The choice to enjoy your crab rolls hot or cold comes down to a matter of personal preference, similar to the debate on cold vs. warm lobster rolls. Many people enjoy warm crab rolls during cooler months for a comforting, hearty meal, while cold crab rolls offer a refreshing option perfect for warmer or summer months.

Follow the recipe on this blog for hot rolls, or use the steps above to create a creamy crab roll filling for a chilled version that suits the season!

What kind of bread works best for crab rolls?

For the best crab rolls, we recommend using brioche-style hot dog buns. For a true “New England style” crab roll, choose a traditional split-top bun. Always toast your buns with butter, even if you plan to serve your rolls cold – the warm, crisp bread complements the tender, buttery crab perfectly!

  • Prep Time: 10 mins
  • Cook Time: 5 mins
  • Total Time: 15 mins

Ingredients

Instructions

Ingredients

  • 16 ounce can Culinary Reserve Colossal Crab meat
  • 6 tbsp. Clarified butter
  • Juice of 1 lemon
  • 2 tbsp. Fresh chives, chopped
  • 4 Brioche style hot dog buns
  • Green leaf lettuce, for serving

Old Bay Aioli

  • 1 cup Mayonnaise
  • 1 tbsp. Dijon mustard
  • 1 tbsp. Old Bay seasoning

Instructions

  1. Make the Old Bay Aioli. In a small bowl, add the mayonnaise, Dijon mustard, and old bay seasoning. Stir to combine and keep chilled until you are ready to serve.
  2. In a large non-stick skillet, heat 3 tablespoons of clarified butter over medium heat. When butter is hot, place the brioche buns open-side down and cook for about 2 - 3 minutes until golden brown. Remove from skillet and set aside.
  3. In the same skillet, heat the remaining 3 tablespoons of clarified butter over medium heat. When butter is melted, carefully add the crab meat so it does not break.
  4. Turn heat to low. Add1 tablespoon of chives. Gently fold together and allow to warm until crab is heated through, about 1-2 minutes max.
  5. Remove from the heat and add the juice of 1/2 a lemon.
  6. Assemble the rolls. Add one thin layer of lettuce on the bottom of the buns. Generously fill the buns with crab meat mixture. Sprinkle each roll with the remaining chives and the juice of the other 1/2 of lemon.
  7. You may top the rolls with Old Bay Aioli or serve on the side.
