  • 4 TBSP Olive Oil, or your Preference
  • 2 TSP Kosher Salt
  • 2 TSP Fresh Cracked Black Pepper
  • 1 TBSP Dried Oregano
  • Non-Stick Cooking Spray, your Preference
  • 2 Cups Chopped Lettuce
  • ¼ Cup Red Onions, Diced
  • ¼ Cup Green Bell Peppers, Diced
  • ¼ Cup Banana Peppers, Diced
  • ¼ Cup Kalamata Olives, Pitted and Halved
  • ¼ Cup Cherry Tomatoes, Halved
  • ¼ Cup Feta Cheese, Cut into 1/2 inch Cubes
  • ½ Cup Hummus, any Variety

Instructions

  1. Remove the skin from the swordfish steaks and cut into 1-inch cubes. Season with salt, pepper, oregano, and 2 tablespoon olive oil. Toss until evenly coated.
  2. Lightly spray the air fryer basket with non-stick cooking spray. Add the swordfish in a single layer and cook at 375°F for 9 minutes, shaking once halfway through, until just cooked and lightly golden.
  3. While the swordfish cooks, combine romaine lettuce, red onion, green pepper, banana peppers, olives, tomatoes, and feta in a large bowl. Season lightly with remaining salt, pepper, and 2 tablespoon olive oil. Toss gently.
  4. Spoon 2 tablespoons of hummus into the bottom of each serving bowl and spread slightly. Top with the salad mixture, then finish with the warm swordfish tips. Drizzle with the remaining olive oil before serving.
