    Spicy Glazed Cod

    • 1 pound bag Naked Wild Cod - (3) 6 ounce portions
    • ¼ cup Sesame oil
    • 1 clove Fresh Garlic, chopped
    • 1 tablespoon Fresh Ginger, grated
    • 1 tablespoon Tomato paste
    • 1 tablespoon Fish sauce
    • 1 tablespoon Apple Cider vineger
    • 1 tablespoon Honey
    • 1 tablespoon Crisp Chili oil
    • Pomegranate arils and basic leaves, for garnish

    Roasted Acorn Squash

    • 1 medium Acorn Squash, sliced into half moons
    • 4 tablespoons Butter, cubed
    • 2 tablespoons Olive oil
    • to taste Salt and pepper

    Instructions

    Roasted Squash

    1. Preheat the oven to 450°F degrees. On a baking sheet lined with parchment paper, add the acorn squash. Top with butter cubes and drizzle with olive oil. Season with salt and pepper. Roast for about 30 minutes until cooked and caramelized.

    Baked Cod

    1. Reduce the oven to 375°F degrees.
    2. In a medium bowl, combine the sesame oil, garlic, ginger, tomato paste, fish sauce, apple cider vinegar, honey, and crisp chili oil.
    3. Thoroughly coat each portion of Cod with sauce mixture. Add the cod to the baking sheet with the squash. Spoon some sauce over the squash as well.
    4. Cook for 16-18 minutes or until cod is cook through.
    5. TO CHECK THAT FISH IS COOKED THROUGH:Gently push the flat side of a wooden skewer through the thickest part of the fish. If it goes through with no resistance, it is done. If there is resistance, cook for another minute or two and test again.
    6. Serve topped with pomegranate arils and basil leaves. Bon Appetit!
