You can safely freeze oysters both in the shell and shucked. However, it’s important to note that frozen oysters have a slightly different texture compared to fresh, unfrozen oysters. That makes them better suited for cooked dishes as opposed to raw preparation. Still, that unique ocean flavor will remain intact if you freeze them correctly.

Freezing oysters is a safe, effective way to extend their shelf life for several months. According to FoodSafety.gov, oysters can be frozen either in their shells or shucked.
It is important to note, however, that freezing oysters does affect their texture. The delicate firmness that makes oysters so enjoyable raw will soften after thawing. So, while you can freeze oysters raw, aim to cook them upon thawing. We generally do not recommend consuming frozen oysters raw.
You can freeze oysters in the shell, and it’s quite simple to do! First, make sure you are using live oysters. You can tell an oyster is alive if their shells are tightly closed or snap shut when tapped. Discard any oysters you suspect are deceased.
Rinse your live oysters using cold running water to remove any grit or debris. Then place them in a freezer-safe bag or container, leaving a bit of space for expansion. Aim to store live oysters at 0°F, if not colder.
While freezing oysters in the shell is convenient, it tends to create more noticeable texture changes after thawing. For that reason, these oysters are best used in baked, stewed, or grilled seafood recipes.
If you prefer to shuck before freezing, keep the oyster meat and the briny juice inside the shell. That juice is known as liquor.
First, strain out any shell fragments. Then pack the oysters and liquor into a freezer-safe container, leaving about half an inch of headspace. Make sure the shucked oysters and liquor are sealed completely before freezing.
We recommend using your frozen oysters within 3 to 6 months. To thaw them, place them in the refrigerator overnight. You can also place them under cold running water before cooking. Do not refreeze your oysters once you’ve thawed them.
