(2) 5-ounce Salmon portions, patted dry of any excess moisture

⅓ cup White Vinegar
Instructions
Place pot of water over medium-high heat. Add a palmful of salt and ⅓ cup of white vinegar. Bring up to a simmer.
Carefully add salmon portions into simmering water.
Turn down to medium heat (a low simmer) and cook for 5-6 minutes.
Check for doneness by gently pushing the flat side of a wooden skewer through the thickest part of the fish. If it goes through with no resistance, it is done. If there is resistance, cook for another minute or so and test again.
