To get fish that isn’t breaded but crispy, you can add flour (we like using Wondra) or cornstarch directly to the flesh. But the secret to getting breaded fish crispy is to bread it evenly and pan fry it at a high temperature. (Fish cooked at a lower temperature tends to get greasier). The choice of breadcrumbs also helps – that’s why we suggest using Panko breadcrumbs, which yield a crispier crust.
You certainly can add your choice of cheese to a fish sandwich! Mild cheddar, gouda, or American cheese are good options.
One 4-6 oz portion t per sandwich would be our recommendation.
