Cod with Mango Chimichurri Sauce

A fantastic light and healthy meal for a weeknight or family dinner. Chimichurri sauce makes everything taste better, and mango adds such a delicious sweet kick. ⁣⁣⁣

    Cod Marinade

    • ⅓ cup olive oil
    • zest of 1 lemon
    • 4 tbsp lemon juice
    • 4 garlic cloves, minced
    • 1 tbsp smoked paprika
    • ½ tsp cumin
    • 2 tsp dry parsley
    • ⅓ cup chopped fresh dill

    Mango Chimichurri

    • 1 mango, finely chopped
    • ½ cup cilantro, chopped
    • ½ cup parsley, chopped
    • garlic cloves, minced
    • 1 jalapeno, deveined, chopped
    • ½ onion, finely chopped
    • ½ tsp red pepper flakes
    • ⅓ cup olive oil
    • 2 tbsp apple cider vinegar
    • ¼ tsp salt
    • ¼ tsp black pepper

    Instructions

    1. Combine marinade ingredients. Put the fish in a zip lock bag and pour the marinade over it. Marinade for 6 hours.⁣⁣⁣
    2. Sear the fish on both sides in a cast iron pan for 3-4 mins and then transfer to the oven in the same pan and cook for an additional 14 minutes. Serve over steamed asparagus.⁣⁣⁣
    3. Combine the chimichurri ingredients, and top the cod filets with the chimichurri mixture.
