How to Cook Bacon Wrapped Scallops

Bacon

  1. Pre-heat oven to 325°F.
  2. Coat a sheet pan with non-stick cooking spray. Arrange bacon on a sheet pan in a single layer.
  3. Add a sprinkle of water to the pan (about 1 tbsp.) to ensure bacon does not dehydrate and remains “wrap able”.
  4. Bake for 5-8 minutes until bacon is cooked but not browned.

Citrus BBQ Glaze

  1. Heat a small sauce pot on the stovetop over low-medium heat.
  2. Add orange juice concentrate, chili sauce, brown sugar, soy sauce, and sesame oil. 
  3. Whisk together well and keep at a low, steady simmer until thickened into a glaze, about 10 minutes. Do not boil. 
  4. Remove from heat and keep at room temperature. Any extra glaze can be kept in the fridge for future use.

Wrapping and Cooking Scallops

  1. Pre heat air fryer to 375°F. If baking, preheat your oven to 400°F.
