Crispy Haddock Fish and Chips with herby tartar sauce

A healthier Home Kitchen rendition of a classic dish, this recipe is absolutely delicious. The Big 3 herb combo of parsley, chives, and dill give a fresh, bright flavor to the haddock, fries, and tartar sauce. Skip the deep frying, pan frying will do the trick just as well!

    Haddock

    • 1 lb. Haddock fillet, skinless cut into (4) 4 ounce portions
    • ¼ cup Canola Oil
    • to taste Kosher salt and fresh ground pepper

    Breading

    • ¼ cup All purpose flour
    • 1 each Large egg
    • 1 cup Panko crumbs
    • 2 tbsp. Fresh Parsley chopped
    • 2 tbsp. Fresh Chives chopped
    • 2 tbsp. Fresh Dill chopped

    "Not French" Fries

    • 2 or 3 each Russet Potatoes
    • 2 tbsp. Unsalted butter melted
    • 1 tsp. Fresh garlic minced
    • 1 tbsp. Fresh Parsley chopped
    • 1 tbsp. Fresh Chives chopped
    • 1 tbsp. Fresh Dill chopped

    Fancy Tartar Sauce

    • 1 cup Mayonnaise
    • 1 tbsp. Dijon mustard
    • 1 each Lemon zested and juiced
    • 2 tbsp. Dilled Gherkin pickles chopped
    • 2 tbsp. Capers (optional) chopped
    • 1 tbsp. Fresh Parsley chopped
    • 1 tbsp. Fresh Chives chopped
    • 1 tbsp. Fresh Dill chopped

    Instructions

    Haddock Method

    1. Dredge each (4) oz. portion in flour, then egg, and then breading.
    2. Heat a large sauté pan on medium-high heat with ¼ cup tablespoons of oil.
    3. Once hot, add breaded Haddock portions. They should sizzle when placed in pan.
    4. Cook about 4 minutes per side until golden brown or flakes easily.
    5. Remove from pan and keep warm.
    6. Serve the Crispy Herbed Haddock in a pool of Fancy Tartar Sauce & side of fantastic crispy baked fries.

    Crispy Fries

    1. Peel potatoes & cut into ½ inch wedges.
    2. THE SECRET TO CRISPY FRIES: Soak the potato wedges in water. Overnight is best, but even 30 minutes will also work.
    3. Drain and dry well.
    4. Toss in olive oil, salt, and pepper.
    5. OVEN: Arrange on baking sheet and cook at 400°F for 15 minutes. Turn them over and cook for another 15.
    6. AIR FRYER: Add to pre-heated 400°F air fryer and cook for 15 minutes. Shake every 5 minutes.
    7. After cooked, remove and toss in melted butter, garlic, and herb mixture.

    Tartar Sauce

    1. Mix all ingredients well and chill until ready to serve.
